Yes - the above video was recorded using screen capture software on my mac while i was running Mars Explorer for iPhone inside my development environment on my computer.
 
I am afraid that the only other way to record iPhone screencasts involves a seperate camera... :-)
 
You can take screenshots really easily however: Just hold the lock button while pressing the home button, and a screenshot will be saved to your iPhone photo library - where you can sync it to your computer.

And Aurbey I have found something that is funny. Us users who are using our Itouch/Iphone can't watch the video like me right now because you need flash player which apple prohibits iPod users from having. So is there anyway that you xcan get the app strait to the iPod? And by the way this really WAS typed on a itouch so LISTEN towhat I am saying (maybe read instead though).

I have seen people screen record apps that they didn't make seemingly without a seperate camera.  The must be doing someting, because you can't see their fingers.  And none of the programs you used are developers only-you can get xcode and iphone simulator and a screen recorder for free, it's just you can only screen record about your own apps in this way.
